A Meatloaf Recipe to End All Meatloaf Recipes

I like to fancy myself a connoisseur of meatloaf… In my opinion there really is nothing to dislike about it. In fact, even a bad meatloafmeatloaf still ranks high on my dinner options. But I have heard some complaints about meatloaf being boring, dry, or “played out” so I did some digging, found this recipe, tried it, and was blown away. Mini-Stuffed Meatloaf with a Ketchup Glaze:
Ingredients:
lb ground sirloin
1/4 cup seasoned panko bread crumbs
1 large egg
1/4 cup pasta sauce
1/4 tsp salt
1/4 tsp ground black pepper
4 slices prosciutto
2-3 ounces mozzarella cheese (block or string)
1 1/2 TBSP ketchup

The real key is to stuff your meatloaf with something that gives it flavor and moisture. If you take nothing else away from this recipe just remember that adding a slice or two of cheese (preferably a mozzarella stick) into your meatloaf will ensure a delicious meatloaf from outside to in.

S’more Cake in Your Crock-Pot! Perfect Winter Treat

This has to be one of the most simple and yet most delicious s’more related recipes that I have ever made. Not only does the cake with logocrockpot do most of the work but it only requires 4 ingredients and you will have one of the most decadent desserts you and your family have ever had.

Ingredients:
I box of chocolate cake mix (plus the ingredients required to make the cake mix)
1 1/2 cups of mini marshmallows
1 1/2 cups of chocolate chips
6 graham crackers

Directions:
Make the cake mix according to the box
Spray the bottom of your slow cooker (or as I can’t recommend enough use a crockpot liner bag, makes clean up incredibly easy)
Add half of the batter to the bottom of the cooker
Then add 1 cup of marshmallows followed by 1 cup of chocolate chips
Break up the graham crackers (saving one aside) and layer on top
Pour in the rest of the batter
Cook on low for 1.5 hours
Add the rest of the marshmallows, chocolate and crumbled cracker on top
Cook another 20-30 min
Serve with ice-cream for an even more special treat!

Christmas Cookies with a Campground Flare

Just because winter is upon us doesn’t mean you can’t incorporate your campfire tastes into the holiday season. In fact, this 3 ingredient “cookie” recipe is sure cookiesto be a family favorite and will remind you of those late nights around the campfire! All you need is:

Ingredients:
Graham cracker sheets
Large Marshmallows
Hershey’s kisses

Directions:
Use half of a graham cracker sheet and cut a half circle using a 2 in round cookie cutter. Cut the large marshmallows in half. Heat the oven to broil and place the oven rack on the lowest level. Place the graham crackers in the center of a large baking sheet about a 1/2 inch apart. Top each graham cracker with a marshmallow (sticky side down). Watch VERY VERY closely as they will toast quickly. Rotate pan as needed. Once golden brown on top immediately remove from oven and gently press 1 Hershey kiss into the center. If possible serve warm!
(If you like the salty/sweet taste, sprinkle a dash of sea salt over the top!)

What to Do with Your Left-Over Turkey

Now that the unofficial “Turkey Day” has commenced it is time to start cleaning out the refrigerator and either using or tossing those leftovers. It seems that turkey with logoregardless of how delicious the turkey itself was there is always more than enough for everyone and then some. Here are some tried and true ways to re-use and re-purpose these tasty leftovers and help reduce food waste.

*Freeze It. Sounds like an obvious solution doesn’t it? Simply place the turkey in a freezer bag. Thaw later to use in soups, pastas, or sandwiches.
*Panini’s: I live by the mantra that you can put anything between two pieces of bread and it taste amazing, turkey is no exception. I particularly enjoy when there is some leftover cranberry sauce to smear on the bread. Simply add some cheese, red onion, turkey, and thin slices of apple and put on a panini press (or frying pan). The result is delicious!
*Turkey and Noodles: Take your favorite chicken and noodle recipe and easily sub in turkey instead. Chances are you won’t even know the difference.
*Thai Curry Turkey: Are you tired of the whole “Thanksgivingy” type food? Take the turkey out of its element and spice it up with a thai curry outlined in this recipe here!

Turkey Mistakes to Avoid This Thanksgiving

The side dishes are nice and dessert is expected but what people really come to enjoy is the turkey at Thanksgiving. That is why we are sharing with you 5 turkey mistakes 150x150common mistakes that many of us make in preparing and cooking our holiday turkeys and how you can avoid them.

Did you know that it takes 4 days for a frozen turkey to thaw properly? Ya neither did many other people which has left them dunking their bird in hot water or even worse, placing a half frozen turkey in the oven. Be sure to a lot the 4 days for your bird to thaw.
While common sense would tell you to keep your turkey refrigerated until time to cook you also need to allow time for the turkey to come to room temperature before placing in the oven. This will ensure even cooking and a moist meat.
You have probably heard that you must thoroughly dry the exterior of the skin of your turkey (paper towels do the trick) to ensure a crisper skin but did you know you should be doing the same to the cavity of the bird as well? And while you are in there drying don’t forget to season the interior generously as well.
If you buy only one kitchen product this year make it a roasting rack to put inside your pan. Without using a roasting rack the bottom of your bird will be overcooked, dry, and the skin will burn.
I know your mom did it, and your moms mom and so on but stop cooking your stuffing inside the turkey. You end up having to cook the turkey longer to get the stuffing cooked through in order to avoid a soggy salmonella bread slop. This dries out your turkey and makes the skin tough.
Basting your turkey? Stop it. Opening the oven door and losing the heat means it takes even longer to cook and therefore drying out the meat and even with that fact aside your are actually just making your turkey skin soggy.
Let it rest. I know that you have all been waiting for hours for a bite of that tasty turkey but letting it rest for at least 15 minutes out of the oven will ensure that the juices settle and all parts of the turkey remain moist.

Getting into the Pumpkin Spice Spirit

It seems that everywhere you look there is a pumpkin flavored or pumpkin scented something whether its pumpkin scented soap or pumpkin flavored coffee pumpkin collage with logothe trend is here and stronger than ever.  Since there is no fighting popular opinion we thought we would share with you on of our favorite pumpkin flavored recipes.

Pumpkin Flavored Puppy Chow:

Ingredients

8 cup Chex Cereal
12 oz White Melting Chips (White Chocolate)
½ cup Pumpkin Puree
2 cup Powdered Sugar
3 tsp Pumpkin Spice
1 cup Fall Color M&M’s

Directions

  1. Melt candy chips by microwaving 30 seconds then stirring and repeating until melted.
  2. Add Pumpkin and stir to combine.
  3. Spread cereal on lined tray(s) and pour mixture over cereal.
  4. In a bowl add spice to powdered sugar and mix well.
  5. Sprinkle sugar mixture cereal and toss to coat well.
  6. Leave on tray(s) to dry out for a while.
  7. Add M&M’s when you transfer to a serving bowl.

 

S’mores Even When You’re Not Camping!

One of the absolute best things about camping is, of course, the s’mores.  But why limit these amazing little desserts to just camping? This recipe allows you to smore bites make these sweet treats year round, even when you can’t be out by the campfire, relaxing by your RV.

S’more Bites:

Ingredients:

Graham crackers

Large Marshmallows

Hershey Kisses

 

Directions:

Break graham crackers into halves

Cut large marshmallows in half and place on top of graham cracker

Place the sheet of graham crackers and marshmallows under the broiler in your oven… be sure to keep a close eye on them because they will melt almost immediately

Once the marshmallows become melted on top of the graham cracker take out of the oven and place a Hershey kiss on top while the marshmallow is still warm.
